Mount ANY full frame lens to the Z mount

Given there is a industry of building third party adaptors and the Z mount is wide and short, what are the chances of mounting Canon or other lenses to the Z cameras in the future?

    Short to medium term, no. The Z mount spec is kept private by Nikon. It takes a lot of effort to reverse engineer it. Besides it could easily be disabled the next time a Z camera comes out, which will require maintenance and ways to update. Also the Z cameras volume won't be high for this first generation given the spec and lens offerings we have seen so far. When volume is not there, third party won't bother with it.
