What do you guys set for the Fn button for the D7000/D7100? I used to set Fn to ISO in the D40, but with dedicated buttons everywhere I have difficulty even finding a use for the Fn button.

I set it for the digital level, but even then I barely ever use it.

Thomas, same here. I never even remotely considered sticking my nose the other way on a camera, even though the new digitals seem to be designed in a way that it's easier to look through the finder with the right eye.
